    3 c. boiling water
    2 (8-serving size each) pkg JELL-O orange flavor sugar-free gelatin
    4 c. cold club soda
    1 (11 oz) can mandarin orange segments, drained
    2 c. sliced strawberries

    Directions

    1. Stir boiling water into dry gelatin mix in large bowl at least 2 minutes until completely dissolved. Stir in club soda. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves a definite impression).
    2. Stir in oranges and strawberries. Pour into 9-by-5-inch loaf pan sprayed with cooking spray.
    3. Refrigerate 4 hours or until firm. Remove from loaf pan. Store leftover gelatin in refrigerator.
