    2 slice(s) Hy-Vee bacon
    ½ c. chopped onion
    2 c. mashed potatoes
    1 (12 oz) pkg Fish Market halibut steaks, thawed, cooked, crumbled
    Hy-Vee salt and Hy-Vee pepper, to taste
    1 c. panko bread crumbs

    Directions

    1. Cook bacon in a skillet over medium heat; remove from pan. Cool; crumble. Sauté onion in same skillet.
    2. Stir together bacon, onion, potatoes, halibut, salt and pepper. Roll in bread crumbs.
    3. Broil on LOW for 8 minutes; turn. Broil an additional 2 to 5 minutes or until golden.
