1 tsp. Hy-Vee Select olive oil
2 shallots, thinly sliced
⅓ c. water
1 (16 oz) package frozen Hy-Vee sweet peas
1 tbsp. chopped fresh oregano
2 tbsp. Hy-Vee lemon juice
2 garlic cloves, minced
Hy-Vee salt and Hy-Vee pepper, to taste

Directions

  1. Heat olive oil in a large skillet over medium heat. Add shallots and cook until tender, stirring occasionally. Add water and peas; bring to boil. Cover and cook 5 minutes or until peas are tender.
  2. Place pea mixture in food processor. Add oregano, lemon juice and garlic; process until smooth. Season with salt and pepper, if desired.
