    ½ c. Hy-Vee Select olive oil
    1 large shallot, chopped
    4 clove(s) garlic, minced
    2 lbs. baby bella mushrooms
    ½ c. chopped fresh parsley
    1 ½ c. Hy-Vee chicken broth
    ¼ c. Hy-Vee lemon juice
    3 tbsp. Hy-Vee Select red wine vinegar
    1 tsp. Hy-Vee red pepper flakes
    2 Hy-Vee bay leaves

    Directions

    1. Heat oil in a large skillet over medium-low heat.
    2. Add shallot and garlic. Sauté until golden, about 6 minutes.
    3. Discard shallot and garlic. Increase heat to medium-high. Add mushrooms and parsley. Sauté for 8 minutes.
    4. Reduce heat to medium-low. Stir in chicken broth, lemon juice, vinegar, red pepper flakes and bay leaves. Cover and simmer 5 minutes.
    5. Cool to room temperature. Transfer to container, cover and chill until cold.
    6. To serve, drain mushrooms and discard bay leaves.
