    4 (6 oz each) salmon fillets
    2 tbsp. Hy-Vee orange juice
    2 tbsp. Hy-Vee pancake syrup
    2 tbsp. teriyaki sauce
    ½ tsp. Hy-Vee red pepper flakes
    ½ large cantaloupe, diced
    ¾ c. finely diced red bell pepper
    ¼ c. finely chopped cilantro
    2 tbsp. finely chopped green onion
    1 jalapeno pepper, finely minced
    juice of 1 lime (2 tbsp)
    ¼ tsp. Hy-Vee salt

    Directions

    1. Place salmon in a resealable plastic bag.
    2. In a small bowl, combine orange juice, syrup, teriyaki sauce and red pepper flakes to make a marinade. Pour over fillets and refrigerate 2 to 12 hours.
    3. Meanwhile, in a medium bowl, toss together cantaloupe, red bell pepper, cilantro, green onion, jalapeno pepper and lime juice. Cover and refrigerate until ready to serve with the salmon.
    4. Preheat broiler.
    5. Remove salmon fillets from marinade and discard marinade.
    6. Place salmon on a greased broiler pan. Sprinkle with salt.
    7. Broil for 5 to 7 minutes or until fish flakes easily with a fork.
    8. Serve with cantaloupe salsa on the side.
