1 red pepper, seeded and chopped
½ cucumber, peeled and chopped
½ c. corn
1 c. chopped tomato
¼ c. chopped green onions
1 tbsp. Gourmet Garden cilantro
1 tbsp. Gourmet Garden mild or hot chili
1 tbsp. olive oil
2 tbsp. lime juice
1 tbsp. vinegar
¼ tsp. black pepper
Chips, for serving

Directions

  1. In a medium bowl combine all ingredients. Refrigerate up to 24 hours.
  2. Let stand at room temperature for 30 minutes before serving with chips.
