    5 russet potatoes
    2 strips Hy-Vee bacon
    ⅔ c. Hy-Vee shredded cheddar cheese, divided
    ⅔ c. Hy-Vee sour cream, divided
    Green onions, chopped, for garnish

    Directions

    1. Preheat oven to 400 degrees. Pierce cleaned potatoes with a fork and bake for 45 minutes or until tender; cool to the touch.
    2. Meanwhile, place bacon on cooling rack over baking sheet and bake for 15 to 20 minutes or until crispy. Crumble into bite-sized pieces; set aside.
    3. Cut potatoes in half lengthwise and divide cheese among halves. Bake 5 minutes or until cheese is melted.
    4. Top with sour cream, bacon and green onions before serving.
