    ¾ c. shortening
    1 ½ c. sugar
    3 eggs
    2 ¼ c. flour
    ¼ tsp. baking soda
    ¼ tsp. salt
    ¾ c. buttermilk
    zest of 1 lemon
    ¾ c. chopped nuts
    ¾ c. granulated sugar
    juice of 1 lemon

    Directions

    1. Preheat oven to 350 degrees. Spray three 9-by-5-inch loaf pans with non-stick cooking spray.
    2. Cream shortening and sugar. Beat in eggs.
    3. Combine flour, baking soda and salt. Add to creamed mixture.
    4. Stir in buttermilk. Add lemon zest and nuts. Divide among prepared pans.
    5. Bake for 30 to 35 minutes.
    6. While bread is still warm, glaze with mixture of sugar and lemon juice.
