    1 tsp. lemon zest, plus additional for garnish
    1 tsp. fresh lemon juice
    2 tsp. Hy-Vee honey
    1 tsp. ground flaxseed
    2 tsp. Hy-Vee HealthMarket chia seeds
    2 tbsp. Hy-Vee unsweetened coconut flakes, toasted and divided
    2 tbsp. Culinary Tours lemon glazed California almonds with blueberries, divided
    fresh blueberries, optional

    Directions

    1. Place Icelandic yogurt, lemon zest, lemon juice, honey, flaxseed, and chia seeds in a small bowl. Stir to combine.

    2. Place half of the yogurt into a pint-size glass container. Top with half of the toasted coconut flakes and half of the lemon glazed almonds and blueberries. Repeat layers. Garnish parfait with fresh blueberries and additional lemon zest, if desired.
