Leftover Ham and Bean Soup

1 c. sliced carrots | ||
1 medium onion, chopped | ||
1 stalk(s) celery, sliced | ||
2 clove(s) garlic, minced | ||
1 (32 oz) container Kitchen Basics beef broth | ||
2 (15 oz each) cans Great Northern beans, drained | ||
2 bay leaves | ||
2 c. chopped leftover ham |
Directions
- Heat oil in a large saucepan. Add carrots, onion, celery and garlic. Cook 5 minutes.
- Stir in broth, beans and bay leaves. Bring to a boil. Reduce heat; cover and simmer 15 minutes.
- Stir in ham and continue cooking until ham is heated and vegetables are tender. Remove bay leaves before serving.
