    1 tbsp. olive oil
    1 c. sliced carrots
    1 medium onion, chopped
    1 stalk(s) celery, sliced
    2 clove(s) garlic, minced
    1 (32 oz) container Kitchen Basics beef broth
    2 (15 oz each) cans Great Northern beans, drained
    2 bay leaves
    2 c. chopped leftover ham

    Directions

    1. Heat oil in a large saucepan. Add carrots, onion, celery and garlic. Cook 5 minutes.
    2. Stir in broth, beans and bay leaves. Bring to a boil. Reduce heat; cover and simmer 15 minutes.
    3. Stir in ham and continue cooking until ham is heated and vegetables are tender. Remove bay leaves before serving.
