    ½ lbs. lean ground beef
    1 (15-oz.) can Hy-Vee whole kernel corn, drained
    1 (16-oz.) jar Hy-Vee salsa
    1 (2.25-oz.) can Hy-Vee sliced black olives, drained
    1 c. Hy-Vee low-fat cottage cheese
    1 c. Hy-Vee sour cream
    4 c. Hy-Vee tortilla chips, divided
    2 c. Hy-Vee fancy shredded mild cheddar cheese, divided
    ½ c. tomato, chopped

    • 8-inch-square baking dish
    • Aluminum foil

    Directions

    1. Preheat oven to 350 degrees.

    2. Brown meat; drain. Return to the pan and stir in corn, salsa and olives. Heat through. 

    3. Combine cottage cheese and sour cream in a bowl. 

    4. In an 8-inch-square baking dish, layer 2 cups chips, half of meat mixture, ¾ cup cheddar cheese and half of cottage cheese mixture. Repeat layers.

    5. Cover and bake for 35 minutes. 

    6. Uncover and top casserole with remaining 1/2 cup cheddar cheese and tomatoes.

    7. Continue baking, uncovered, for 10 minutes.
