⅓ c. Hy-Vee 2% reduced-fat milk
1 Hy-Vee large egg, lightly beaten
2 fresh jalapenos, seeded and chopped
1 c. Hy-Vee shredded sharp Cheddar cheese
½ tsp. classic BBQ seasoning

Directions

  1. Preheat oven to 400 degrees. Spray 9 standard muffin cups with nonstick spray; set aside. 

  2. Stir together corn muffin mix, milk, and egg in a medium bowl. Stir in chopped jalapenos, cheese, and BBQ seasoning. Fill prepared muffin cups 3/4 full.
