    1 tbsp. Hy-Vee Select extra-virgin olive oil
    4 Roma tomatoes, seeded and chopped
    2 tbsp. Hy-Vee Select balsamic vinegar
    1 shallot, finely chopped
    2 clove(s) garlic, minced
    Hy-Vee salt and Hy-Vee pepper, to taste
    1 (12 oz) package Fish Market scallops
    ½ lbs. Hy-Vee long spaghetti, cooked according to package directions

    Directions

    1. Heat oil over medium-high heat in a large skillet. Add tomatoes, vinegar, shallots, garlic, salt and pepper. Cook for 4 minutes. Add scallops; cook for an additional 3 minutes.
    2. Toss with spaghetti and serve immediately.
