    ¼ c. Hy-Vee creamy peanut butter
    2 tbsp. reduced-sodium soy sauce
    1 tbsp. Hy-Vee honey
    1 lbs. boneless, skinless chicken breasts, cut into ½-inch-wide strips
    ¾ c. Hy-Vee honey-roasted peanuts, finely chopped
    ¼ c. Hy-Vee plain breadcrumbs
    1 garlic clove, minced
    ¼ tsp. Hy-Vee black pepper
    ¼ tsp. ground red pepper

    Directions

    1. Combine peanut butter, soy sauce and honey in small bowl; microwave on HIGH for 30 seconds; stir until smooth. Place mixture in large resealable plastic bag; add chicken and toss to coat. Refrigerate 30 minutes, tossing occasionally to coat. Remove chicken from peanut butter mixture; discard mixture.
    2. In a large resealable plastic bag, combine peanuts, breadcrumbs, garlic, black pepper and red pepper. Add chicken and toss to coat. Place coated chicken on wire rack sprayed with non-stick cooking spray, in a large sheet pan.
    3. Bake at 375 degrees for 25 to 30 minutes or until chicken reaches 170 degrees.
