    1 pear, unpeeled, cored, cut into small chunks
    4 rosemary sprigs
    3 oz. gin (6 tbsp)
    1/2 to 1 oz simple syrup (1 to 2 tbsp)

    Directions

    1. Muddle the pear and rosemary in the bottom of a bowl or glass until the pear has turned into a purée (if doing a large batch, you can pulse everything in a food processor until chopped into small pieces).
    2. Using a fine-mesh strainer, strain the mixture over a bowl, using a rubber spatula to press the puree through the sieve. Discard solids.
    3. Transfer puree to a cocktail shaker filled with ice. Add gin and simple syrup and shake for about 5 seconds. Strain into a glass and enjoy!
