1 tsp. Hy-Vee canola oil
¼ c. diced white onion
1 (12 oz) can Hy-Vee evaporated milk
6 oz. white American cheese, chopped
8 oz. Hatch chile cheese, shredded
Chopped tomato and chopped fresh cilantro, optional
Hy-Vee tortilla chips, for serving

Directions

  1. Heat oil in a medium skillet over medium heat. Cook onion, stirring often, for 7 minutes or until it is softened.
  2. Add evaporated milk to the skillet and bring to a simmer, stirring frequently. Add American cheese and stir until completely melted. Remove from heat, add Hatch chile cheese and stir until completely melted.
  3. Garnish with tomato and cilantro. Serve with chips, if desired. Dip will thicken upon standing.
