    1 c. Hy-Vee granulated sugar
    ½ c. Hy-Vee butter, softened
    2 Hy-Vee eggs
    1 c. peeled, seeded, mashed papaya
    ¼ c. Hy-Vee chopped pecans
    ½ c. Hy-Vee dried cherries
    1 ½ c. Hy-Vee flour
    ¼ tsp. baking powder
    1 tsp. Hy-Vee baking soda
    ½ tsp. Hy-Vee ground cinnamon
    ¼ tsp. Hy-Vee ground nutmeg
    ½ tsp. Hy-Vee ground ginger

    Directions

    1. Preheat oven to 325 degrees.
    2. Cream together sugar and butter. Add eggs and beat until fluffy.
    3. Mix in papaya, pecans and cherries.
    4. In a medium mixing bowl, stir together flour, baking powder, baking soda, cinnamon, nutmeg and ginger.
    5. Add to papaya mixture and mix until combined.
    6. Pour batter into a greased 9-by-5-inch loaf pan. Bake for 45 minutes to 1 hour or until inserted toothpick comes out clean.
