1 large head cauliflower, cut into florets and stems
Salt
5 large cloves garlic, chopped
2 tbsp. butter
¼ tsp. freshly ground nutmeg
Freshly ground black pepper, to taste
Chives and parsley, for garnish

Directions

  1. Fill a large pot with 1 to 3 inches of water. Add a steam and cover. Bring to a boil.
  2. Add cauliflower stems and half the florets to the steamer. Sprinkle with salt. Add the rest of the florets and garlic.
  3. Cover and steam for 10 to 15 minutes or until cauliflower is soft.
  4. Drain and transfer cauliflower to a food processor. Add butter, nutmeg and pepper. Process until smooth. Sprinkle with chives and parsley.
