Fruit and Cream Fireworks with Sugar-Free Gelatin
Servings and Ingredients
|2 (0.3 oz each) pkg sugar-free strawberry Jell-O|
|2 (0.44 oz each) pkg sugar-free berry blue gelatin|
|2 c. fresh strawberries, stems removed and quartered|
|1 (8 oz) container Hy-Vee fat-free whipped topping, thawed, divided|
|1 c. fresh blueberries, divided|
- Bring 1-1/4 cups water to boil. Mix in strawberry Jell-O until dissolved. Repeat with berry blue gelatin in a separate bowl. Refrigerate each until set. Cut into 1/2-inch squares.
- In a shallow dish, mash 1 cup of the quartered strawberries with a potato masher.
- In a small bowl, fold mashed strawberries into 1/2 tub thawed whipped topping. In another small bowl, fold 3/4 cup blueberries with remaining whipped topping.
- In individual glasses or dishes, layer strawberry Jell-O, strawberry whipped topping mixture and remaining fresh strawberries. Repeat with blueberry gelatin, blueberry whipped topping mixture and remaining fresh blueberries. Serve immediately or cover and chill up to 2 hours before serving.
