    3 large eggs
    1 c. oil
    2 c. sugar
    1 tsp. vanilla
    2 c. flour
    1 tsp. cinnamon
    1 tsp. baking soda
    ½ tsp. salt
    4 c. chopped apples

    Directions

    1. Preheat oven to 350 degrees.
    2. Beat together eggs, oil, sugar and vanilla. Stir in flour, cinnamon, baking soda and salt. Fold in apples. Pour into an ungreased 9-by-13-inch baking pan.
    3. Bake for 40 minutes or until toothpick comes out clean.
