Add espresso, vodka and maple syrup to a cocktail shaker; add ice. Cover and shake for 30 to 60 seconds, or until well chilled.
Place a scoop of ice cream into a chilled 10-oz. coup glass. Strain mixture into prepared glass. Garnish with grated dark chocolate and top with espresso beans, if desired.
