    ½ c. Hy-Vee granulated sugar
    ¾ c. Hy-Vee vegetable shortening
    1 Hy-Vee large egg
    ¼ c. water
    1 tsp. Hy-Vee vanilla extract
    3 c. Hy-Vee quick oats
    1 c. Hy-Vee flour
    1 tsp. Hy-Vee salt
    ½ tsp. Hy-Vee baking soda
    1 (12 ounce) bag Hy-Vee butterscotch baking chips

      Directions

      1. Preheat oven to 350 degrees. Lightly spray cookie sheets with non-stick cooking spray.
      2. Cream sugars, shortening, egg, water and vanilla until smooth.
      3. Combine quick oats, flour, salt and baking soda in a large bowl. Add to creamed mixture, mixing until just blended. Stir in butterscotch chips.
      4. Drop by rounded tablespoons onto prepared cookie sheet. Bake 12 to 15 minutes, or until lightly golden.
