    8 medium russet potatoes, peeled and cubed
    1 (8 oz) tub Hy-Vee onion and chive cream cheese, softened
    1 (8 oz) container Hy-Vee sour cream
    ½ c. Hy-Vee butter, softened
    2 tsp. Hy-Vee salt
    ⅓ c. Hy-Vee grated Parmesan cheese

    Directions

    1. Preheat oven to 350 degrees.
    2. Cook potatoes in boiling water until tender. Drain.
    3. In a large mixing bowl, beat together potatoes, cream cheese, sour cream, butter and salt with an electric mixer.
    4. Spoon mixture into a greased 2-quart casserole. Sprinkle with Parmesan cheese.
    5. Bake uncovered for 25 minutes or until thoroughly heated.
