2 (2.5-oz. each) pkgs. hot & spicy chicken flavor instant lunch ramen noodles
4 thin sliced Di Lusso premium deli ham
1 tbsp. Gustare Vita olive oil
1 c. sliced shiitake mushrooms
2 tbsp. Hy-Vee plain cream cheese, softened
2 Hy-Vee Short Cuts hard-cooked eggs, grated
Culinary Tours everything bagel seasoning, for garnish
Green onions, sliced; for garnish

Directions

  1. Bring vegetable stock to a boil in a medium saucepan. Add ramen noodles. Reduce heat to medium-low. Simmer, uncovered, for 5 to 7 minutes or until noodles are tender, stirring occasionally.

  2. Meanwhile, cook ham slices, two at a time, in medium skillet over medium heat for 3 to 5 minutes or until browned, turning halfway through; remove from heat and set aside. 

  3. Heat olive oil in same skillet; add mushrooms and cook over medium heat 3 to 4 minutes or until golden brown and tender, stirring frequently.

  4. Add cream cheese to ramen-broth mixture in saucepan, stir until cream cheese is completely melted.

  5. To serve, divide ramen mixture between 2 serving bowls. Arrange ham slices, mushrooms, and shredded egg on top of ramen. Garnish with everything bagel seasoning and green onions, if desired.
