    1 avocado, diced
    2 tsp. lemon juice
    1 (16 oz) pkg Hy-Vee coleslaw mix
    3 green onions, chopped
    1 c. seeded diced tomato
    ½ yellow bell pepper, diced
    ½ c. purchased balsamic vinaigrette dressing
    1 tsp. Hy-Vee Dijon mustard
    1 clove(s) garlic, minced
    salt and pepper, to taste

    Directions

    1. Place diced avocado in a large bowl. Sprinkle with lemon juice to coat.
    2. Add coleslaw mix, green onion, tomato and yellow bell pepper. Toss.
    3. In a small bowl, combine vinaigrette dressing, Dijon mustard and garlic. Pour over salad and toss to coat. Season with salt and pepper.
