    2 clementines, scrubbed
    1 small onion, peeled and quartered
    1 tsp. ground sage
    1 (1 lb) lean pork tenderloin, trimmed and silverskin removed

    Directions

    1. Place zest of 1 clementine in a resealable plastic bag. Squeeze juice of clementines into bag. Add onion, sage and tenderloin. Seal and shake gently to combine. Refrigerate for at least 3 hours.
    2. Remove tenderloin and place on a baking sheet sprayed with non-stick cooking spray. Discard marinade and plastic bag.
    3. Roast at 400 degrees until internal temperature reaches 145 degrees, about 25 minutes. Let stand 10 minutes before slicing and serving.
