    2 Hy-Vee eggs, beaten
    1 c. lite eggnog
    2 tsp. rum extract
    ½ c. Hy-Vee butter, softened
    2 ¼ c. Hy-Vee flour
    2 tsp. baking powder
    ½ tsp. Hy-Vee salt
    ½ tsp. Hy-Vee cinnamon
    1 (6 oz) jar Hy-Vee maraschino cherries, drained, rinsed, halved
    1 (6 oz) jar Hy-Vee green maraschino cherries, drained, rinsed, halved

    Directions

    1. Preheat oven to 350 degrees.
    2. In a large mixing bowl, stir together eggs, eggnog, rum extract and butter.
    3. Sift together flour, baking powder, salt and cinnamon.
    4. Add to eggnog mixture and stir until just moistened. Gently fold in cherries.
    5. Pour eggnog mixture into a greased 9-by-5-inch loaf pan. Bake for 45-50 minutes or until inserted toothpick comes out clean. Cool for 10 minutes.
    6. Remove from pan and cool completely. Wrap in colorful cling wrap and store in refrigerator.
