Christmas Eggnog Bread

2 Hy-Vee eggs, beaten | ||
1 c. lite eggnog | ||
2 tsp. rum extract | ||
½ c. Hy-Vee butter, softened | ||
2 ¼ c. Hy-Vee flour | ||
2 tsp. baking powder | ||
½ tsp. Hy-Vee salt | ||
½ tsp. Hy-Vee cinnamon | ||
1 (6 oz) jar Hy-Vee maraschino cherries, drained, rinsed, halved | ||
1 (6 oz) jar Hy-Vee green maraschino cherries, drained, rinsed, halved |
Directions
- Preheat oven to 350 degrees.
- In a large mixing bowl, stir together eggs, eggnog, rum extract and butter.
- Sift together flour, baking powder, salt and cinnamon.
- Add to eggnog mixture and stir until just moistened. Gently fold in cherries.
- Pour eggnog mixture into a greased 9-by-5-inch loaf pan. Bake for 45-50 minutes or until inserted toothpick comes out clean. Cool for 10 minutes.
- Remove from pan and cool completely. Wrap in colorful cling wrap and store in refrigerator.
