    ½ lbs. 85% lean ground beef
    ½ c. chopped onion
    3 clove(s) garlic, minced
    1 medium green pepper, seeded, chopped
    1 (5.7 oz) pkg Lipton smoked chipotle rice
    1 ¾ c. water
    8 medium tomatoes
    1 tsp. chipotle seasoning
    Hy-Vee salt and Hy-Vee pepper
    ½ c. Hy-Vee shredded taco cheese

    Directions

    1. Preheat oven to 350 degrees. In a large skillet, combine ground beef, onion, garlic and green pepper. Cook over medium heat until beef is no longer pink.
    2. Stir in rice and water. Bring to a boil. Cover. Reduce heat to low. Simmer 7 minutes.
    3. Meanwhile, slice off stem ends of tomatoes. Gently scoop out pulp. Mash and reserve 1/3 cup pulp; discard remaining pulp. Place tomatoes in a greased 11-by-7-inch baking dish.
    4. When rice is cooked, stir in tomato pulp, seasoning, salt, pepper and cheese. Spoon an equal amount of rice mixture into each tomato.
    5. Bake tomatoes uncovered 20 to 25 minutes or until heated through.
