Use mashed chickpeas or garbanzo beans as the base of this delicious vegetarian sandwich.

1 (15-oz.) can Hy-Vee no-salt-added garbanzo beans, or chickpeas, rinsed and drained
1 stalk(s) celery, chopped
½ c. fresh parsley, chopped
2 tbsp. Hy-Vee plain Greek yogurt
2 tbsp. shallot, finely chopped
4 ½ tsp. fresh lemon juice
½ tsp. Hy-Vee Dijon mustard
Hy-Vee salt
Hy-Vee ground black pepper
Desired toppings, such as: whole-wheat bread, lettuce, tomato, and/or onion

Directions

  1. Coarsely mash chickpeas in a large bowl with a fork. Stir in celery, parsley, yogurt, shallot, lemon juice, mustard, salt, and pepper. 

  2. Spread chickpea mixture on toasted bread, wrap, or use as a dip with Triscuits. If desired, top sandwiches with lettuce, tomato, and/or onion.
