    1 lemon
    ⅓ c. light mayonnaise
    6 fresh basil leaves, thinly sliced
    1 garlic clove, minced
    1 rotisserie chicken, shredded
    1 (1 lb) loaf Hy-Vee focaccia bread
    1 medium tomato, thinly sliced
    4 slice(s) Hy-Vee mozzarella cheese

    Directions

    1. Zest lemon and cut in half. Squeeze 1 tablespoon juice from lemon; discard remaining lemon.
    2. Combine mayonnaise, basil, lemon zest, lemon juice and garlic, stirring until creamy. Stir in chicken, coating to cover chicken.
    3. Slice focaccia bread to form sandwich. Layer chicken mixture, tomato and cheese on bottom half. Top with remaining half of focaccia. Cut into 8 sections.
    4. To heat, place sandwiches in panini press or heated skillet for 2 to 3 minutes or until heated through.
