    Directions

    1. Cook Pasta: Preheat oven to 400 degrees. Set butter out to soften, In large saucepan, bring 2 quarts water to boil; add generous pinch of salt. Boil pasta 8 to 10 minutes or until al dente. Drain pasta, reserving 1 cup cooking water. Return pasta to pot and toss with 2 teaspoons olive oil.

    2. Roast Chicken: Pat chicken dry with paper towels and season with 1/8 teaspoon each salt and pepper and 1 teaspoon garlic Parmesan seasoning. Place chicken on one end of a foil-lined and greased sheet pan; roast in oven 8 minutes.

    3. Cook Vegetables: Rinse vegetables. Cut asparagus into 1-inch pieces. In medium bowl, combine asparagus, tomatoes, 2 teaspoons olive oil and 1/4 teaspoon each salt and pepper. After the chicken has roasted 8 minutes, add vegetables to sheet pan; roast an additional 8 minutes or until internal temperature of chicken reaches 165 degrees on an instant read meat thermometer.

    4. Make Compound Butter: Combine softened butter with remaining garlic Parmesan seasoning and 1 tablespoon Parmesan cheese in small bowl; set aside. When chicken and vegetables have 1 minute cooking time remaining, add 1/4 cup reserved pasta water to pasta in pot, return pasta pot to burner over low heat. Add roasted vegetables and compound butter to pasta.

    5. It's Mealtime: Toss pasta and compound butter gently as butter melts; add more pasta water until desired consistency is reached. Slice chicken breasts into strips. Divide cavatappi pasta and vegetables between 2 bowls; top with sliced chicken and garnish with remaining Parmesan cheese.
