    1 ½ lbs. uncooked boneless, skinless chicken breasts
    1 (14.5 oz) can Hy-Vee Italian stewed tomatoes, undrained
    ½ c. sliced fresh mushrooms
    ¼ c. chopped onion
    ¼ tsp. Hy-Vee black pepper

    Directions

    1. In a large skillet sprayed with non-stick cooking spray, cook chicken over medium heat for 6 minutes, turning once halfway through cooking time.
    2. Stir in tomatoes, mushrooms, onion and black pepper. Bring to a boil. Reduce heat and simmer, covered, 15 minutes or until chicken reaches 165 degrees. Remove chicken from skillet; cover chicken to keep warm.
    3. Simmer tomato mixture, uncovered, about 5 minutes to reach desired consistency. Serve over chicken.
