    1 ½ c. chopped peeled carrots
    5 c. chopped peeled potatoes
    1 ½ c. chopped celery
    1 tsp. Hy-Vee salt
    6 c. water
    1 (12 oz) can Hy-Vee evaporated milk
    2 tbsp. chopped fresh parsley
    1 c. Hy-Vee skim milk
    1 lbs. reduced-fat Velveeta cheese, cubed
    2 c. diced ham
    ½ tsp. Hy-Vee black pepper

    Directions

    1. In a 5-quart pot, combine carrots, potatoes, celery, salt and water. Boil 20 minutes.
    2. Remove from stove and slightly mash potato mixture.
    3. Stir in evaporated milk, parsley, milk, cheese, ham and black pepper.
    4. Return to stove and heat till bubbly.
