2 c. crushed graham crackers
½ c. butter, melted
¼ c. chopped walnuts
3 (8 oz each) pkg cream cheese, softened
1 ½ c. sugar
5 eggs
3 tbsp. lemon juice
1 pt. sour cream
½ c. sugar
1 tsp. vanilla
Fresh fruit, for garnish

Directions

  1. Preheat oven to 350 degrees.
  2. Combine graham cracker crumbs, melted butter and walnuts. Press on bottom and up sides of a 10-inch springform pan.
  3. Combine cream cheese and 1-1/2 cups sugar. Add eggs, 1 at a time, beating thoroughly after each egg. Beat in lemon juice. Pour filling over crust.
  4. Bake at 350 degrees for 45 minutes without opening oven door.
  5. Remove cheesecake from oven.
  6. Reduce oven temperature to 300 degrees.
  7. Mix sour cream, 1/2 cup sugar and vanilla. Spread topping over cheesecake.
  8. Return pan to oven and bake for 15 minutes longer at 300 degrees.
  9. Cool on rack for several hours. Refrigerate overnight before serving.
  10. Serve plain or topped with fresh fruit.
