    4 boneless, skinless chicken breasts
    Kosher salt and fresh cracked Hy-Vee black pepper, to taste
    1 tbsp. Hy-Vee Select olive oil
    4 medium tomatoes, diced
    3 tbsp. minced red onion
    2 clove(s) garlic, minced
    6 to 8 basil leaves, roughly chopped
    4 (1/2-inch thick) slices fresh mozzarella
    4 tbsp. Hy-Vee finely shredded Parmesan cheese

    Directions

    1. Preheat oven to 350 degrees.
    2. Heat a large oven-proof saute pan over high heat. Season both sides of chicken with salt and pepper. Sear the chicken in the olive oil over high heat for 2 minutes. Flip chicken and place the entire pan in the oven and bake for 20 minutes.
    3. Meanwhile, in a medium bowl combine tomatoes, red onion, garlic and basil. Season with salt and pepper to taste and mix well.
    4. Remove chicken from oven, top with the tomato mixture and one piece of mozzarella cheese per breast. Bake an additional 3 to 4 minutes or until the cheese is lightly melted. Remove from oven and immediately top with Parmesan.
