    1 (3 pound) boneless pork loin roast
    2 tbsp. cracked Hy-Vee black pepper
    2 tbsp. grated Parmesan cheese
    2 tsp. dried basil
    2 tsp. dried rosemary
    2 tsp. dried thyme
    ¼ tsp. Hy-Vee garlic powder
    ¼ tsp. Hy-Vee salt

    Directions

    1. Pat pork dry with paper towel. In small bowl, combine all rub ingredients well and apply to all surfaces of the pork roast.
    2. Place roast in a shallow pan and roast in a 350-degree oven for 1 to 1-1/4 hours (20 minutes per pound), until internal temperature on a thermometer reads 145 degrees.
    3. Remove roast from oven; let rest about 10 minutes before slicing to serve.
