1 (8 oz) can Hy-Vee corn, drained and rinsed
1 (8 oz) can Hy-Vee peas, drained and rinsed
1 (15 oz) can Hy-Vee black beans, drained and rinsed
½ c. chopped onion
½ c. chopped red bell pepper
½ c. chopped green bell pepper
2 tbsp. Hy-Vee Select olive oil
¼ c. Hy-Vee Select red wine vinegar
½ tsp. Hy-Vee salt
½ tsp. Hy-Vee black pepper
Hy-Vee multi-grain tortilla chips, optional

Directions

  1. In a medium serving bowl stir together corn, peas, black beans, onion, red bell pepper and green bell pepper.
  2. In a small bowl, combine olive oil, vinegar, salt and black pepper. Stir into black bean mixture to coat.
  3. Cover and refrigerate until serving time. Serve with tortilla chips, if desired.
