    Dark chocolate, melted, optional
    Unsalted pistachios, shelled, chopped, optional

    Directions

    1. Add butter, powdered sugar, and maple syrup to a medium bowl. Beat, using an electric mixer, until smooth and creamy.

    2. Place frosting into a small piping bag fitted with a star tip. Pipe frosting onto the underside of one waffle crisp cookie. Top frosting with remaining cookies. If desired, dip one half of cookies into dark chocolate and finish with chopped pistachios. Allow chocolate to set and serve immediately.
