    1. Cook Rice: Preheat oven to 400°F. Rinse brown rice under cool running water to remove excess starch. In small saucepan, combine rice and 1 cup water; bring to boil. Reduce heat; cover and simmer rice 30 minutes or until water is absorbed and rice is tender. Fluff rice with fork; keep warm.

    2. Marinate Beef: Combine bulgogi seasoning with 1/4 cup each olive oil and water, 1/2 teaspoon salt and 1/4 teaspoon pepper in medium bowl. Reserve half of marinade mixture. Add beef to remaining marinade; stir to coat. Marinate 15 minutes.

    3. Prepare Vegetables: Slice green onions into 1/4-inch pieces; set aside. In small bowl, toss red onion and carrots with 1 teaspoon olive oil and 1/8 teaspoon each salt and pepper; set aside. Toss peppers and broccoli with 2 teaspoons olive oil and 1/8 teaspoon each salt and pepper in bowl or resealable plastic bag. Spread in an even layer on foil lined sheet pan and roast in oven 10 minutes.

    4. Saute Beef: Drain marinade from beef. In skillet, heat 1 teaspoon olive oil over medium-high heat. Add beef; sauté 4 minutes until meat starts to brown. Add onions, carrots and reserved marinade; sauté an additional 3 minutes until onions are soft and beef reaches an internal temperature of 145°F on an instant read meat thermometer.

    5. It's Mealtime! Divide rice between 2 bowls; add vegetable mixture and top each with beef mixture. Sprinkle with desired amount of sesame seeds and green onions. If desired, drizzle with Sriracha sauce.
