    4 (about 5 oz each) boneless skinless chicken breasts
    ½ c. shredded Emmental cheese, divided
    4 thin slices Di Lusso ham (about 2 oz)
    1 tsp. Hy-Vee Select olive oil
    ¼ c. Italian-seasoned breadcrumbs

    Directions

    1. Preheat oven to 350 degrees. Coat a shallow baking dish with nonstick cooking spray.
    2. Cut a slit about 3 inches long and a few inches deep in the thickest part of each chicken breast, being careful not to cut all the way through chicken. Fill each breast with 2 tablespoons cheese and 1 slice ham. Secure with a toothpick; place in baking dish. Brush oil on stuffed chicken breasts. Sprinkle evenly with breadcrumbs.
    3. Cover baking dish with foil; bake 30 minutes. Remove foil; bake 10 minutes more or until golden brown. Drizzle with pan juices, and serve.
