    4 c. uncooked Hy-Vee old-fashioned oats
    1 c. Hy-Vee flaked coconut
    ¾ c. wheat germ
    1 (2 ounce) package Hy-Vee slivered almonds
    ¼ c. Hy-Vee butter, melted
    ¼ c. Hy-Vee honey
    ½ tsp. almond extract
    1 (6 ounce) package Hy-Vee dried apricots, chopped
    Hy-Vee low-fat yogurt, fresh fruit or Hy-Vee skim milk, optional

    Directions

    1. In a large mixing bowl, stir together oats, coconut, wheat germ and almonds.
    2. Whisk together butter, honey and almond extract and stir into oat mixture. Spread evenly in a greased 13-by-9-inch baking pan.
    3. Bake at 300 degrees for 50 minutes to 1 hour, stirring well every 15 minutes, or until wheat germ is golden brown. Stir in chopped apricots, cool and store in an airtight container.
    4. If desired, serve granola with low-fat yogurt, fresh fruit or skim milk.
