Chicken and Mozzarella Wrap-Up

All you need:
1/4 c. Hy-Vee seasoned breadcrumbs
4 (4 oz each) Hy-Vee 100% natural chicken breasts
4 pieces Hy-Vee Light Lil' Hunk mozzarella string cheese
1/4 c. chopped fresh basil
1 tbsp Hy-Vee Select olive oil

All you do:
Preheat oven to 375 degrees. Place breadcrumbs in a shallow dish and set aside.
Pound chicken breasts into rectangles roughly 1/4-inch thick by placing one on at a time in a plastic bag and pounding it flat with a rolling pin.
Lay out flattened chicken breasts on a work surface and place a string cheese stick in the center of each rectangle across the span of the narrower side. Sprinkle with basil. Roll up the chicken jellyroll- style, brush the tops with olive oil and carefully roll in breadcrumbs.
Place chicken seam-side down on a baking tray and top with any remaining breadcrumbs. Bake for 35 to 40 minutes.
