Potato-Thyme Crusted Cod

All you need:

  • 3/4 c. buttermilk
  • 3 tbsp grated lemon peel
  • 1 tsp Hy-Vee Dijon mustard
  • 1 c. Hy-Vee instant potato flakes
  • 1 tsp dried thyme
  • 6 (6 oz each) cod fillets
  • 3 tbsp Hy-Vee Select olive oil

All you do:

  1. Preheat oven to 400°F. Lightly coat a baking dish with nonstick cooking spray; set aside. In a shallow dish combine buttermilk, lemon peel and mustard. In a separate shallow dish combine potato flakes, thyme, and salt and pepper to taste.
  2. Dip fillets into buttermilk mixture then into potato flakes, pressing to coat completely.
  3. In a large nonstick skillet heat oil over medium heat until hot. Add fillets and cook 2 minutes per side or until golden, turning once. Transfer to a baking dish.
  4. Bake fillets 10 to 12 minutes or until fish flakes easily with a fork. Serve with lemon wedges.
