Zucchini Casserole

All you need:

  • 2 pounds zucchini, chopped
  • 1/2 c. chopped onion, divided
  • water
  • 1 pound ground beef, browned and drained
  • 1 (10.5 oz) can cream of chicken soup
  • 1 c. sour cream
  • 1 c. grated carrots
  • 1/4 c. margarine, melted, divided
  • 1 (6 oz) pkg stuffing mix, divided
  • salt and pepper, to taste

All you do:

  1. In medium saucepan, boil zucchini and 1/4 cup onion in water until tender. Drain.
  2. Combine with ground beef, soup, sour cream, carrots, remaining 1/4 cup chopped onion, salt and pepper.
  3. Evenly pour half of margarine in the bottom of a 9-by-13-inch baking dish. Spread half of stuffing mix over margarine. Pour meat/soup mixture over stuffing. Top with remaining stuffing mix. Pour remaining margarine on top.
  4. Bake at 350 degrees for 35 minutes.
