Tomato Pesto-Topped Mahi Mahi

All you need:

  • 1 (12 oz) package mahi mahi fillets
  • Juice of 1/2 lemon
  • sea salt, to taste
  • cracked black pepper, to taste
  • 4 tbsp sundried tomato pesto, divided
  • 2 tbsp pine nuts, toasted, divided

All you do:

  1. Preheat oven to 350 degrees.
  2. Place fillets in an 11-by-7-inch baking dish. Squeeze lemon juice over fillets and sprinkle with salt and pepper.
  3. Bake 5 minutes. Turn fillets and bake another 5 to 7 minutes or until fish flakes easily with a fork.
  4. Serve fillets topped with pesto and pine nuts.
