Spinach Salad with Sweet Blackberry Vinaigrette

All you need:

  • 1/2 c. organic blackberries
  • 2 tbsp Hy-Vee Select balsamic vinegar
  • 2 tbsp Hy-Vee honey
  • 2 tbsp Hy-Vee Select olive oil
  • 1/4 tsp Hy-Vee vanilla
  • 1/4 tsp Hy-Vee salt
  • 1 (9 oz) bag fresh spinach
  • 1/2 c. crumbled Gorgonzola cheese
  • 1/3 c. sliced red onion
  • 1/3 c. purchased glazed walnuts

All you do:

  1. In a blender combine blackberries, vinegar, honey, oil, vanilla and salt. Pulse to desired consistency.
  2. In a large bowl, toss spinach, cheese, red onion and blackberry mixture.
  3. Stir in walnuts before serving.
