Southwest-Spiced Roast Pork Tenderloin

  • 1 1/2 tsp paprika
  • 3/4 tsp Hy-Vee chili powder
  • 3/4 tsp ground cumin
  • 3/4 tsp Hy-Vee brown sugar
  • 3/4 tsp Hy-Vee granulated sugar
  • 3/4 tsp Hy-Vee ground black pepper
  • 1/2 tsp Hy-Vee salt
  • 1 (1 lb) pork tenderloin, trimmed

All you do

  1. Preheat oven to 425 degrees.
  2. Combine paprika, chili powder, ground cumin, brown sugar, granulated sugar, black pepper and salt in a small bowl.
  3. Rub tenderloin with spice mixture and place in a shallow pan.
  4. Roast for 25 minutes or until internal temperature reaches 145 degrees. Let rest for 5 minutes before slicing to serve.
