Roasted Sweet Potatoes

All you need:

  • 4 pounds sweet potatoes, peeled, cut into 1-inch cubes
  • 2 medium sweet onions, cut into eighths
  • 1/4 c. light butter, melted
  • 1/4 c. packed Hy-Vee brown sugar
  • 1/4 c. Hy-Vee 100% apple juice
  • 1/4 c. Hy-Vee pecan pieces
  • 1 tsp Hy-Vee cinnamon
  • 1/4 tsp Hy-Vee nutmeg

All you do:

  1. Preheat oven to 450 degrees. Stir together sweet potatoes, onions and butter. Place on a large baking sheet with sides.
  2. Bake 30 minutes, stirring once, until almost tender.
  3. Stir together brown sugar, apple juice, pecan pieces, cinnamon and nutmeg. Stir into sweet potatoes. Bake an additional 10 to 15 minutes or until potatoes are tender.
