Refrigerator Strawberry-Rhubarb Jam

Serves: Makes about 2 cups

All you need:

  • 1 1/2 c. strawberries
  • 1/2 c. sliced rhubarb
  • 2 tbsp chia seeds
  • 2 tbsp sweetener (honey, agave nectar or maple syrup)
  • 1/2 tsp vanilla

All you do:

  1. Combine ingredients together in food processor and mix to desired consistency.
  2. Pour into glass jar; cover refrigerate for 1 hour before serving.
  3. Store jam in refrigerator.
