Old-Fashioned Oatmeal Cookies

All you need:

  • 1 c. raisins
  • 1 c. water
  • 1 1/2 c. sugar
  • 3/4 c. shortening
  • 1 tsp vanilla
  • 2 large eggs
  • 2 1/2 c. Gold Medal whole wheat flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp ground cloves
  • 2 c. uncooked quick oats
  • 1/2 c. chopped nuts
  • pecan halves, optional
  • 1/2 c. buttermilk, optional

All you do:

  1. In saucepan, heat raisins and water to boiling. Reduce heat and simmer uncovered until raisins are plump, about 15 minutes.
  2. Drain but reserve liquid. If needed, add enough water to raisin water to equal 1/2 cup liquid.
  3. Combine raisins, 1/2 cup raisin water (or substitute 1/2 cup buttermilk), sugar, shortening, vanilla, eggs, flour, baking soda, cinnamon, baking powder, cloves, oatmeal and chopped nuts. Mix well.
  4. Drop by spoonfuls onto ungreased cookie sheet. If desired, place pecan half on top of each cookie.
  5. Bake at 350 degrees for 12 to 15 minutes.
  6. Remove cookies to cooling rack.
